How to Make a Key Lime Pie

It’s almost summer time and what better to satisfy a sweet tooth than a freshly homemade key lime pie?  It’s the perfect summer time desert, very low calorie and extremely easy to make.  It also doesn’t cost much to buy the ingredients needed.

You’ll need:

1 envelope unflavored gelatin

1 cup sugar

½ cup lime juice

¼ cup water

4 eggs, separated

2 drops green food coloring (optional)

1 cup whipping cream, whipped

1 pie crust

Whipped cream

In a small saucepan combine gelatin, ½ cup sugar, lime juice, water, and egg yolks.  Cook it over medium heat making sure you’re stirring it constantly, until the mixture boils and then thickens.  This should take about six to seven minutes.  Then you remove it from heat.  Stir in the food coloring if you would like your pie to be green.  Transfer the mixture to a large bowl.  Refrigerate the mixture for about 45 minutes until it slightly mounds.

In a large bowl, beat egg whites until soft peaks form.  Then gradually add the other ½ cup of sugar, beating it until stiff peaks form.  Then fold egg whites, whipped cream, and lime mixture into the pie crust.  Then refrigerate it until firm.  Then enjoy your pie.  You can top it with whipped cream or even lime slices.
